The inspiration for Franco's exciting and well-developed menu comes from his childhood. For several generations, his family have been involved with food and wine, either as farmers, wine growers or restaurateurs.

Franco grew up in the hills and valleys of southern Italy, where he learned to appreciate the goodness of naturally grown herbs and vegetables grown on land belonging to his family. He then moved to Sibari on the south east coast of Italy, where he developed a particular passion for fish and seafood.

Franco's expertise and enthusiasm for the dishes he creates using fresh seafood, pasta, vegetables and herbs is more than evident. His knowledge of Italian cuisine, and sincere interest in healthy eating, blend to produce the most delicate flavours, giving his dishes that special touch.
